I am from the UK & wanted to have a go at making corn bread but I found Paula Deen's recipe for Corn Casserole & its amazing! My kids love it. I make double batches & they have it heated up for breakfast (good food for our rubbish british winters). Everyone adores it. You cant get corn muffin mix over here but I found a copycat recipe for it on the net & use that. They also love Red Velvet Muffins, which I make using Cake Man Raven's recipe. We have only just started to get the american food network over here & i look forward to more good american recipes. Tyler Florene's jamaican plantain dumplings are also a winner with my friends mums recipe for curry goat (not curried goat). =0)

Paula’s corn cheese casserole is delicious. I’ve made it several times but I leave out the butter and add extra cheese.

Thanks for posting the Jiffy mix recipe. I keep flour and cornmeal in my freezer at all times. Next time I’m out of Jiffy mix, I’ll use this recipe.
